Abstract

La Barcelona del tombant del segle XIX al XX era una ciutat que creixia emmirallant-se en les altres capitals europees. El desig d'esdevenir el model de metròpolis moderna de la burgesia va suposar una transformació urbana i industrial que afectà, sobretot, les classes populars. L’urbs s'agegantava a gran velocitat i calia solucionar les seves mancances per poder celebrar un certamen que ─a imatge de París─ hauria de convertir-la en la capital cosmopolita de referència: l'Exposició Universal de 1888. A remolc de la febre modernitzadora, Barcelona anà absorbint totes les novetats que venien del continent europeu, entre les quals podien comptar-s'hi aquelles que pertanyien al camp de l'alimentació. Així doncs, les modes que s'iniciaren primer en la indumentària van introduir-se després en el sector del gust i van provocar que la ciutat modifiqués la seva manera de menjar i beure. La societat benestant barcelonina deixava de banda els plats tradicionals per consumir amb delit les menges foranes que es cuinaven en els restaurants de luxe que ocupaven l'artèria principal de la restauració: les Rambles. El seguit de flamants adquisicions de procedència gal·la que oferien les taules dels establiments elitistes de més renom ─Au Lyon d'Or, la Maison Dorée, el Suís o el Martin, entre d'altres─ es van veure reflectides en el teatre, atès que els autors dramàtics coetanis van recollir totes aquestes novetats i les van consignar en els seus textos. L'anàlisi de la literatura dramàtica des del prisma de l'art culinari ─a imatge de la literatura gastronòmica existent─ obre les portes a una nova manera d'abordar els estudis teatrals, ja que la cuina és un art polièdric que concerneix camps tan diversos com la història, la sociologia, la política o l'antropologia. A través d'un triangle que té la modernitat, la cuina i el teatre com a vèrtexs, doncs, podrem comprovar l'evolució del gust d'una ciutat que va modificar la seva fesomia en pro del progrés per convertir-se en la metròpolis moderna del tombant de segle. La nova Barcelona ─en la qual convivien burgesos i menestrals però, sobretot, obrers o individus marginats que habitaven els baixos fons i l'extraradi─ bandejava les "fondes de sisos", construïa hotels i restaurants de primer ordre, adoptava menges foranes i deïficava els cuiners en nom de les noves tendències i les modes. Tanmateix, aquesta modificació dels costums alimentaris estava reservada a les classes benestants, ja que tots aquells que pertanyien a les classes populars havien d'acontentar-se amb els sempiterns escabetxos, salaons, escudelles o "carn de dissabte": el salari de la fam no tenia treva. D'entre els autors dramàtics que van copsar tots aquests canvis i en deixaren testimoniatge, la figura de Santiago Rusiñol excel·leix sobre les altres. A través de la tetralogia que configura l'eix central del nostre treball ─i sense eludir alguns dels títols més representatius del corpus rusiñolià─ l'autor va llegar-nos la representació de la realitat barcelonina més enllà dels escenaris: L'Escudellòmetro (1905) mostrava la monomania gastronòmica a la qual es veien abocats els més desafavorits; La "merienda" fraternal (1907) era una sàtira contra Alejandro Lerroux, el líder populista que organitzava “berenars democràtics” mentre s'omplia el ventre amb menges sibarites; El triomf de la carn (1912) alertava dels preceptes del vegetarianisme i, en darrer lloc, Souper-Tango (1918) denunciava els vicis nocturns d'una Barcelona aliadòfila i addicta als cafès-concert. Per mitjà de la cuina ─en tant que microcosmos quotidià indestriable del gran teatre que és el món─ podrem evidenciar l'evolució d'una ciutat que al llarg de trenta anys, des del 1888 fins al 1919, va rebre amb els braços oberts totes les novetats alimentàries del continent europeu i d'ultramar per esdevenir penó del cosmopolitisme mundial.


Barcelona, at the turn of the twentieth century, was a booming town reflected in other European capitals. The desire to become the model of a modern bourgeois metropolis required an urban and industrial transformation that affected the popular classes especially. The city was growing at an incredible rate and needed to solve their shortcomings in order to celebrate an event that, like Paris before, would make it the cosmopolitan capital of reference: the Universal Exhibition of 1888. Spurred on by this modernizing fever, Barcelona absorbed all the new tendencies from the European continent, among which, we can highlight those belonging to the field of food. Thus, trends that began first in the field of clothing were introduced later in the field of taste and caused the city to change its way of eating and drinking. The prosperous members of Barcelona society abandonned their traditional dishes for the lure of foreign delicacies, cooked in luxury restaurants occupying the main artery of the restaurant area: the Ramblas. The many acquisitions of gallic origin which were offered at the tables of the most renowned elite establishments −Au Lyon d'Or, the Maison Dorée, the Suís or the Martin, among others− were reflected in the theatre, as contemporary playwrights reflected all these developments and introduced them into their texts. The analysis of dramatic literature from the perspective of culinary arts –according to surviving gastronomic literature− opens the door to a new approach to theatre studies, as the kitchen is a multifaceted art, involving fields as diverse as history, sociology, politics and anthropology. Therefore, through a triangle with modernity, cooking and theatre as its vertices we can see the evolution of the flavour of a city that changed its face through progress to become the modern metropolis of the turn of the century. The new Barcelona, where the bourgeoisie and artisans lived, along with workers and marginalized individuals who inhabited the underworld and surroundings, banished the "fondes de sisos",* built hotels and restaurants of the highest order, adopted foreign delicacies and deified cooks on behalf of the new trends and fashions. However, this change in eating habits was reserved for the upper classes, since all those who belonged to the popular classes had to be content with the eternal pickles, salted fish, stews or "Saturday meat pots": the wages of hunger gave no truce. Among the playwrights who understood all these changes and who left their testimony of it, the figure of Santiago Rusiñol shines above the others. Through the quartet that forms the core of his work, without forgetting some of the most representative titles of his work, the author showed us the representation of reality beyond the Barcelona stage: L'Escudellòmetro (1905) showed the gastronomic limitations that the most disadvantaged were doomed to; La “merienda” fraternal (1907) was a satire against Alejandro Lerroux, the populist leader who organized "democratic lunches" as he filled his belly with gourmet delicacies; El triomf de la carn (1912) warned of the precepts of vegetarianism and finally Souper-Tango (1918) denounced the vices of a Barcelona in thrall to the allies and addicted to the concert cafés. Thanks to cooking, an everyday microcosmos which is inseparable from the great theatre that is the world, we can show the evolution of a city over thirty years, from 1888 to 1919, a city that eagerly received all the culinary innovations from Europe and overseas with open arms, to become a flagship of the cosmopolitan world. *Translator’s note: Cheap, fixed price eateries for the poor.
